Gotta Have My Oysters!

I first tried oysters as a kid. My father would go down to the shore and catch some and bring them home to us. I thought they were delicious when I tried them for the first time. We would eat them raw from the shell. My sister didn't really like them, so I would always scarf hers up and eat hers too, hehehehe!! Since then I have always looked for oysters that tasted as good as those did. They were so fresh, wholesome and I always knew somehow that they were really good for you.

It wasn't until I got older that I actually investigated the benefits of oysters. They are lower in fat and cholesterol than the vast majority of fish that people regularly eat. They have lots of vitamins and minerals as well. Did I mention the sexual benefits for men? WHAT? You didn't know how they increase testosterone levels in men? Well, let me tell you, just get your mate to consume a few on a night that, well, you know, you might be thinking about an intimate evening together? My guess is that you will thank me.

There has been a lot of new ideas in the safe processing of Gulf Coast oysters, and I'm glad because I do love them so much. You have to be careful when consuming raw oysters and there is a new post-harvest method that is greatly reducing the concern for consumers health risks. There are three methods that are currently being used. They are individual quick freezing, heat cool pasteurization, and high hydrostatic pressure. I know not many companies are implementing these techniques, but I'm hoping to make more aware that they can go along way in helping people get more fresh oysters, benefit from them and not have to risk their health.
